This is a lighter comfort food option, perfect for this time of year, or for a Sunday dinner or chop up the veggies ahead and assemble on the weekend, cover and put in fridge, as part of your MEAL PREP for a quick and easy weeknight meal.
Great option for leftovers – make some rice, quinoa or another grain topped with this veggie lasanga.
4 medium zucchini’s chopped into thin circular slices
1 pack of mushrooms, diced
1 jar of marinara sauce
Optional: 1 small bag of spinach, shredded mozzarella OR Goat Cheese, Parmesan cheese
Chop up all ingredients except for spinach – you can leave whole or shred it – if using spinach.
Start with some marinara sauce at the bottom.
Layer zucchini, mushrooms (and spinach if using).
Top with sauce and Parmesan and/or goat or mozzarella cheese.
Continue layers like a lasagna, and top with sauce and remaining cheese.
Cover with foil, bake at 400 degrees for 45 minutes, remove foil layer and bake for an additional 5 minutes.
