My cravings during this pregnancy have ranged from sweet to salty and back to sweet again. I have been craving anything banana flavoured lately as well as oatmeal and I love adding cinnamon and some protein like chia seeds and peanut butter and almonds to our oatmeal breakfast bowls. Anytime I have the opportunity or energy to make homemade muffins for us, can control the sugar content and come across a great recipe, I have to try it out! These Banana Oatmeal Muffins are so moist, store well in the fridge or freezer, taste like banana bread and are a great option for when you are craving something sweet but without all that added sugar!
Banana Oatmeal Muffins via BREN DID
Ingredients:
2 ½ cups old-fashioned oats (1.5 cups ground, 1 cup whole)
2 Tbsp old-fashioned oats for muffin tops
2-3 large overripe bananas (1 cup mashed or or 1 cup applesauce)
2 large eggs lightly beaten
1/3 cup honey
3/4 cup milk (I used unsweetened Almond milk)
2 tsp real vanilla
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
Optional – I added in ¼ cup of chopped walnuts (gives it a nice crunch)
Directions:
Preheat oven to 350. Optional: The original recipe includes toasting the oats*
Place 1 ½ cups of oats in a food processor, until they reach a flour consistency.
TIP: When we have the chance, we blend oats with a hand mixer into oat flour and store it in a sealed container in the cupboard.
3. Mash bananas, add eggs, honey, vanilla, milk and mix to combine.
Add dry ingredients (including ground oats and 1 cup of whole oats) to wet ingredients and mix just until; its incorporated. Allow these to sit for 10 minutes to soak the oats.

4. Optional: fold in ½ cup of fruit or nuts. I added ¼ cup of chopped walnuts
5. Scoop into muffin liners/cups – makes about 14, I just made 12 large muffins. Sprinkle tops with 2 tbsp of reserved oats and press them in slightly to make sure they stick.
6. Bake for 20-23 minutes
Add some of your favourite ingredients to these delicious muffins. They are perfect to take with you on the go, have as a snack and/or add to your little one’s lunch bag!
