Gluten-free Oats, Honey & Chia Bars

Today, on the blog is a granola bar recipe I experimented with and created a few weeks ago using some ingredients that I had in my cupboard.

Every other weekend or so, we make a batch of granola bars. The benefits of

making your own include knowing what ingredients are in the bars + making them ahead saves time during the week + storing the extras in the freezer + with so many granola bar recipes out there, you can change it up!

If you have followed our previous posts, we are advocates of meal prep and enjoy baking. You don’t need to start an at home baking business and bake all weekend long (unless you want to!) but, adding just one baked item to your lunch box for the week makes that snack break even better.

Here is the recipe for my Gluten-Free Oats, Honey & Chia Bars:


2 ½ cups of oats – Bob’s Red Mill Organic Rolled Oats (or gluten free oats)

2/3 cup of gluten free flour – we use PC Gluten Free Flour Blend

1 tbsp of ground flax

2 tsp of chia seeds

¼ tsp of salt

2 tsp of vanilla

¾ tsp of baking soda

1/3 cup of melted coconut oil

2/3 cup of honey

Optional: 1/3 cup of sunflower seeds


1. Mix all the dry ingredients in a bowl.

2. Melt the coconut oil (be careful not to burn – usually about 15 seconds in microwave) + add the wet ingredients to the bowl. Mix together and add in any other optional ingredients like sunflower seeds.

3. Bake at 350 for about 15 minutes (baking time varies depending on your oven).

*Start at this and check it to see if it is slightly browned at mid-point and so on during the baking time. Don’t overcook these bars or else they will be quite hard.

4. Cut into bars. These can be stored in a container in the fridge or store in wax paper or plastic wrapped and baggies in the freezer and take out the night before to enjoy the next day.

These are delicious with the combo of sweetness, protein and some crunch!
