Quinoa and Veggies Bowl

We eat quite a bit of quinoa each week. On it’s own, quinoa is a great healthy option as a side dish or as part of a salad. Adding a few ingredients is a great way to amp up your quinoa side dish and turn it into a filling, protein and veggie packed MAIN DISH for dinner and have a little extra leftover for lunch the next day.

I created this recipe really using what I had leftover in the fridge one day (those really are the best meals) and now it is a part of our dinner recipes and today, I am sharing it with you! #usewhatyouhave

Quinoa & Veggies Bowl Recipe

Ingredients:

2 medium zucchini’s cut into cubes

½ of a medium squash, or 1 whole small one, cubed

2 cups of broccoli, chopped into bite size portions

1 pkg of mushrooms, diced

1 tbsp of coconut oil

1-2 cups of cooked quinoa, we use PC Organics Quinoa

Directions:

1. Cook the quinoa according to package directions.

2. At the same time, cook your veggies in a frying pan on low-medium heat cover and simmer for a few minutes. Squash takes a bit longer so I usually add that into the pan first for a few minutes, followed by the other veggies.

3. Add in your coconut oil to the veggies after they simmer for a few minutes.

Add in your cooked quinoa to the pan, toss with some pepper and salt.

4. Optional: Add in some diced lean turkey kolbassa sausage – you can fry these up for a few minutes so that it is warm or just add it as is to the dish.

Enjoy! This tastes even better the next day for lunch!
