As the weekend approaches, it is great to take a little time to slow down, make a homemade meal, sit at the kitchen table and put our feet up with a cup of coffee and savour these moments. Every other weekend or so, my husband will make these delicious crepes for Breakfast or Brunch. We look forward to it and will often make a few extra on the weekend to have on a Monday for Breakfast or Dessert!
The toppings options are endless! We will often have them with fruit, maple syrup, peanut butter or Greek yogurt, top with chia or pumpkin seeds, cinnamon or shaved chocolate or for dessert with some frozen yogurt or ice cream as well - and of course a cup of coffee!
This recipe is a wonderful traditional family recipe from my husband’s French Canadian side of the family. They are really easy to make, just a few ingredients and cook so quickly.
These crepes are delicious and fluffy. You can make them as thin or thick as you like.
Here is recipe for Homemade Crepes – great to make for Valentine’s Day!
Ingredients:
Vegetable oil: for pan
2 cups of flour (Robin Hood unbleached all purpose flour)
Pinch of salt
2 eggs
2 cups of milk
1 tsp vanilla
Directions:
1. In a large bowl, combine the flour and salt and stir.
2. In another small bowl, combine the eggs, milk, vanilla and stir.
3. Pour the wet ingredients into the dry ingredients. Mix until all of the flour has been broken up and smooth in texture.
Cooking directions:
4. Heat up the frying pan to medium heat. Put about 1 tsp of vegetable oil. Take your spatula and spread the oil around base of the pan. Using a ladle, pour mix into middle of pan.
5. Flatten outwards using the tip of spatula.
6. Let it cook for just under a minute. You will see it start to harden, will see lightly browned on bottom, if so you can turn over (same on other side) then it is ready.
*The first one takes a bit longer because the pan isn’t that hot.
The general cook time for each crepe is just under a minute per side. For remaining crepes, turn the heat down a bit, just under medium heat – the pan gets hot.
*Recipe makes about 6 crepes
Cover with foil wrap until ready to serve. These crepes will surely become a part of your weekend traditions as well! Topping choices are endless – enjoy :)
