Oatmeal & Dark Chocolate Cookie Bars


These cookie bars are so delicious! The texture is like a brownie and cookie combined. Perfect to have with some ice cream and some chocolate sauce, or top with greek yogurt or have on it’s own with a glass of milk.

We love them - they taste just like a chewy, doughy and crumbly chocolate chip cookie - we guarantee you will not be able to just have one bite!

PLUS – your house will smell just like a bakery as they bake in the oven.

Here is the recipe for these Oatmeal and Dark Chocolate Cookie Bars:

(Recipe via Half Baked Harvest)

Ingredients:

2 ½ cups of oats

1 cup all purpose flour

1 cup whole wheat flour

1 cup brown sugar

1 tsp baking soda

½ tsp salt

1 cup coconut oil melted

2 eggs

1 tsp vanilla

8 ounces dark chocolate, chopped into chunks (*we use Chipits Dark Chocolate chips), about 1 ½ cups

Directions:

Preheat oven to 350.

Grease a 9 x 13 pan or line with parchment paper.

In a large bowl: add the oatmeal, flour, brown sugar, salt, melted coconut oil, eggs and vanilla. Stir together until the dough holds together. (The dough will seem oily, a good thing). Mix in 1 cup of dark chocolate. * For this step, we have made it in layers, but usually just add everything together at once and skip the next step:

Turn half of the batter into a prepared pan, pushing the dough into the pan. Sprinkle remaining chocolate and pour remaining half of dough on top of chocolate.

Bake for 20 to 25 minutes, just don’t overbake. Allow bars to cool in pan before slicing and serving.

These cookie bars are perfect to make and bring to a long weekend BBQ – enjoy the long weekend!
